Chicken Spinach Bake

Chicken and Spinach bake

Ingredients

8 cups baby spinach, raw
1/4 cup chicken broth, ready to use, reduced salt
1 large tomato, diced
4 stalk green onion, tops only, sliced
3 tbsp cheese, parmesan, grated
6 /2 breast chicken breast, boneless, skinless (raw weight)

Directions

Preparation:

Heat oven to 350°. Lightly grease a 9×13-inch baking dish or spray with cooking spray. Put spinach in the baking dish, sprinkle with salt and pepper. Add chicken broth. Place raw chicken on spinach. Sprinkle chicken with Cajun seasoning, salt, and pepper. Sprinkle with the diced tomato and green onion. Cover the baking dish with foil. Bake for 25 minutes. Uncover and top chicken with parmesan cheese and bake for 10 to 15 minutes longer, or until chicken is cooked through.
Serves 6.
