Cranberry Apple Almond Rice

Ingredients

1/4 cup, slivered almonds, raw,
3 cups water
1.5 cups wild rice, (dry measure)
2 tbsp olive oil
1 tbsp vinegar, red wine
1 tbsp sugar
2 medium apple, granny smith- cored and diced
1/2 cup cranberry, dried

Directions

Pre heat oven to 325 F. Lightly coat a baking sheet with cooking spray and spread almonds on baking sheet stirring them around occasionally until golden brown ( roughly 10 mins)

In medium saucepan bring 3 cups of water to boil. Add rice and keep adding water as necessary to keep rice from drying out. Simmer until rice is tender. about 30-40 mins. Drain rice and return to saucepan and stir in dried cranberries. Cover and set aside.

In a small bowl whisk together the olive oil, red wine vinegar and sugar.

In a large bowl combine rice and apples and add the oil mixture and toss to coat evenly.
Top with the toasted almonds and ENJOY!
